Why is contaminant detection important in the production of bread and baked goods?

A baking line is relatively vulnerable to contaminants, whether through careless employees, wear from the processing machines made largely out of stainless steel or from raw materials that are contaminated themselves. Any of these concerns can result in hygiene issues or even pose a risk to consumer health. As a result, manufacturers are under pressure. Lawmakers, retailers and customers compel them to minimise the risks. BRC and IFC certification, HACCP analyses and audits are all essential. Failure to obtain certification or perform analyses and audits can jeopardise a company’s image and profitability.
