Why is contaminant detection important in confectionery production?

Chocolate and sweets are exposed to their surroundings when poured into molds. Raw materials such as nuts and grains often contain contaminants. In many cases, manufacturers use wooden molds, parts of which can break off. In addition, machines made of stainless steel are subject to wear and can be a source of contamination. Careless staff pose yet another concern. Depending on what type of contamination occurs, the problem may be “only” hygienic. In the worst case, however, contaminants could endanger consumer health. Lawmakers, retailers and customers compel manufacturers to minimize these risks. Certification under BRC and IFC for example, HACCP analyses and audits are all essential. Failure to obtain certification or perform analyses and audits can jeopardize a company’s image and profitability.

In addition to contaminant detection, it is possible to check the fill level, completeness and weight of packaged goods using X-ray scanners. Even broken products can be detected and separated out.
